We want to honour all those women who, for centuries, shared their knowledge from generation to generation, creating a bridge between the past and the present through recipes born in homes and passed down from mothers to daughters.

In the 1960s, it was women who took the reins of professional gastronomy, managing taverns, eateries and restaurants, trying to balance family life with endless working days in the hospitality industry. They did so from a discreet position, often without the recognition they deserved. However, with the professionalisation of the sector, their invaluable contribution remained anonymous, relegated by a society that took away a trade that had been theirs for centuries.
